We repair Alto-Shaam Halo Heat cook and hold ovens, Combitherm combi ovens and Vector multi-cook ovens. Halo Heat cook and hold problems

Halo Heat is different from most ovens. There is no fan and no big glowing element. A low-density thermal cable wraps the cavity and gives off gentle, even heat. That is why the ovens hold meat so well overnight.

So when a cook and hold runs cold, we do not hunt for a bad fan. We test the heating cable, the temperature probe and the control. A worn door gasket also matters a lot here. The oven works with a closed, still cabinet. A leaky door lets heat escape and dries the food.

A common scene: the overnight brisket is under temp at 6 a.m. The display shows the right setting. In that case the sensor or the cable is often the cause, not the setting.

Combitherm and Vector trouble

A Combitherm does the work of a convection oven, a steamer and more. Water is the weak spot. Hard water leaves scale in the steam system, and scale leads to low steam, slow cooks and odd readings. We clean, test the water valves and probes, and replace worn parts.

Vector ovens have separate chambers. Each one has its own heat, fan speed and time. When one chamber lags, we look at that chamber's fan motor and heating element first. The others can often keep cooking while we work.

• Door will not latch or seal. Hinges and gaskets take a beating on busy lines.
• Oven will not heat at all. We check power, the high limit switch (a safety cutoff) and the control board.
• Holding cabinet uneven. A failing element or thermostat on one side is typical.
• Smoker makes little smoke. The wood chip heater may have failed, or the chip box is packed with old ash.

From first call to fixed price

For a banquet or catering kitchen, a same-day visit can save the event. We manage one for most calls, and phoning early improves the odds. The tech finds the fault, then quotes a flat price. Our commercial diagnostic of $149 is waived the moment you approve the job.

Only genuine OEM parts go in, and our repair warranty covers the work. Some Alto-Shaam boards and cables need to be ordered. When that happens, your next appointment is fixed before we leave the kitchen. Our techs hold licenses and insurance, and each one has passed a background check.

Is an older Alto-Shaam worth fixing?

In most cases, yes. These units are built from heavy stainless steel. Most repairs involve parts made to be replaced, like cables, probes, gaskets and boards.

Replacement is worth a look if a combi has deep scale damage in the steam generator and the cabinet is worn out too. We tell you what we see and what the fix costs. Then the choice is yours.

One tip helps any Alto-Shaam last. Treat or filter the water that feeds your combi, and descale on the schedule in the manual. Most of the steam repairs we do trace back to skipped descaling.
