The Ultimate and Platinum ranges are built for heavy use. After long hours, the problems tend to be the same.
A top burner lights slowly or not at all. That is usually a dirty pilot or clogged burner ports. A range oven that will not heat often has a failed thermocouple or safety valve. If the oven heats but runs off from the dial, the thermostat needs checking. Griddle tops that warp or heat unevenly point to a weak burner or control under that section.
Keep an eye on flame color. A healthy burner shows a crisp blue flame. Yellow tips and soot on pans mean the burner needs cleaning or air adjustment.
Sectional Platinum lines are built as separate pieces bolted into one run. That helps during a repair. We can often shut off one section and leave the rest of the line cooking.
Southbend convection ovens rely on a fan to spread heat. When the fan motor weakens, one rack cooks faster than the others. A faulty door switch can stop the fan too. We also check igniters and gas valves on ovens that will not light.
Steamers bring their own set of problems. Hard water leaves scale in the steam generator. Scale slows the steam and fools the water level sensors. Signs include long cook times, a steamer that keeps filling, or one that shuts down with low water.
A school or hospital kitchen that steams vegetables for hundreds of trays feels a dead steamer fast. For those kitchens we suggest a water filter and a descaling plan. It cuts down on repeat calls.

Most of the time, yes. Southbend builds with heavy steel. Burners, valves and thermostats are made to be replaced. Fixing them costs far less than a new range.
Braising pans and kettles also hold up well. Their tilt gears and elements can be swapped without pulling the whole unit.
A steamer with a badly scaled or cracked generator is a different story. We will tell you if replacing the steam generator, or the whole unit, is the smarter move.
