Delfield was founded in Detroit in 1949 by Paul DeLorenzo and Thomas Springfield. The name joins "Del" and "field" from their last names. The company moved its offices to Mt. Pleasant, Michigan in 1971. It became part of Welbilt, and Ali Group bought Welbilt in 2022. Delfield is known for custom stainless refrigeration.
The 4400 series prep table is the Delfield unit we see most. Its top rail holds pans of cut produce and deli meat right in the hot kitchen air. When the pans creep past 41 degrees, an inspector will notice.

On a 6000XL reach-in, the story is a bit different. A warm cabinet with the compressor running usually means an iced evaporator. In a Delfield reach-in, that coil hides behind the inside back panel. A bad defrost heater, defrost control or fan motor lets frost take over. Torn door gaskets add moisture and make it worse. A puddle on the floor often means a clogged drain from the coil pan.
Custom Delfield counters can be tricky. They are often built into the line with the refrigeration tucked out of sight. We check airflow around the condensing unit first, because a hidden unit gets little fresh air.
Cold pan units are another Delfield staple on serving lines. They keep food cold in open wells. When the pans run warm, the coil under the wells may be iced or the compressor may be short cycling. Short cycling means it starts and stops too often to cool well.
