We repair Blodgett convection ovens, including the Mark V, Zephaire, DFG and CTB series. We also work on Hydrovection ovens, Blodgett combi ovens, deck ovens and the XR8 rack oven. Most jobs are fan motors, igniters, gas valves, door parts, controls and steam parts.

Blodgett has built ovens in Vermont since 1848 and is part of Middleby. It has sold more than a million convection ovens. You will find them in schools, hospitals, grocery stores and restaurants.

What breaks on a Blodgett convection oven

A convection oven is a hot box with a fan. The fan moves air so food cooks evenly. When the oven stops doing that, the cause is usually easy to see once you know where to look.

  • Food cooks faster on one side. The fan motor is slowing down, or the fan blade is bent.
  • Oven will not heat, fan runs. On gas units we check the igniter, flame sensor and gas valve. On electric units we test the elements.
  • Nothing works with the doors shut. A door switch is out of line or has failed.
  • Doors do not close together. Worn hinges or a loose door link. Heat leaks and bakes suffer.
  • Temp readout is off. The probe or thermostat has drifted.

A scene we see often: a school kitchen double stack with the bottom oven dead. The top works fine, so staff cram it full. The fix is often a single igniter or door switch. Once the bottom oven is back, the lunch line moves at its normal pace again.

Hydrovection and combi trouble

Hydrovection ovens add moisture to convection heat. Blodgett says this cooks faster and keeps more weight in the food than dry heat. Water is the source of most of their problems. Scale can block the water line or the spray nozzle. When that happens, the oven loses humidity and food dries out. Combi ovens have the same weak spot. We clean, test valves and replace parts as needed.

Deck ovens and the XR8 rack oven

Blodgett deck ovens are simple and tough. Most calls are about pilots, thermostats and cracked deck stones. The XR8 rack oven is a bigger machine. A rack that will not turn usually has a worn drive motor or a problem with the lift that holds the rack. We check those parts first.
