Montague has a long story. It began in San Francisco in 1857 and still builds its gear in Hayward, California. In 2022 it became part of Ali Group.

Why Montague ranges and broilers act up

Legend ranges are built for kitchens that run all day. After years of boilovers, most trouble comes from grease, spills and heat.

  • Open burner with a lazy yellow flame. The burner ports or orifice are clogged. A deep clean usually brings back a blue flame.
  • Burner will not light. The pilot is out or dirty. We clean it and check the gas supply to the front.
  • Range oven runs hot or cold. The oven thermostat has drifted. We test it with a meter and replace or calibrate it.
  • Broiler heats on one side only. One burner is blocked or its valve is weak.

Island suites like the Excalibur put many burners and ovens on one long block. A single bad gas valve can take out a whole station. We find the one part at fault so the rest of the suite can keep cooking while we work.

Vectaire convection oven issues

Vectaire ovens move hot air with a fan. When a cook tells us the sheet pans on the left bake faster, the fan motor or a damaged fan blade is our first guess. A Vectaire that stays cold gets a look at the igniter, the gas valve and the door switch. The door switch shuts things down when the door opens. A bent switch can fool the oven into thinking the door is always open.

The doors on these ovens get heavy use. Hinges loosen and gaskets tear. That lets heat out and slows every bake. It is an easy fix.

Refrigerated bases under the line

Montague also builds refrigeration, and a base under a broiler has a rough job. Heat pours down on it all shift. Grease finds its way into the condenser. When the drawers run warm, a clogged coil or a worn drawer gasket is the most common find.
