Three oven families, three repair paths

Most kitchens that call us own one of three Alto-Shaam oven types. Tell the dispatcher which one is down. It changes the parts we bring.

• Cook and Hold ovens. Low, slow, radiant heat for roasts and overnight holding.
• Combi ovens. Convection heat and steam in one cavity. Older units carry the Combitherm name. Newer ones are sold as Prodigi.
• Vector multi-cook ovens. Two to four small chambers stacked in one body. Each chamber has its own heat, fan and timer.

Cook and Hold: when the roast is under temp

Halo Heat is gentle. A heating cable wraps the cavity and warms the walls. There is no fan to fail and no water to scale. That leaves a short list when the oven runs cold.

The cable can burn open. The cavity sensor can drift, so the display says 250 and the box is at 210. The control can fail to call for heat. And the door gasket matters more here than on any fan oven. With still air inside, a leak at the door bleeds heat all night.

Many units cook by probe. A bent or shorted probe gives wild readings and can end a cook early. Deluxe models take several probes per chamber, so swap one in and see if the fault follows. That test takes a minute and tells us a lot.

Combi ovens: steam and water faults

Current Alto-Shaam combis have no boiler. They make steam by spraying water on a hot surface, and fans move it through the cavity. That design skips the boiler scale problem. It does not skip water problems.

Hard water still leaves scale on spray nozzles, on the fan wheel and on the cavity sensor. Low steam, slow cooks and humidity errors follow. A stuck water valve gives no steam at all. A blocked drain leaves water pooled in the cavity floor.

These ovens wash themselves with cleaning tablets. When staff skip cycles, grease bakes on and the drain clogs. If the wash cycle will not finish, the drain, the wash pump or the door switch is the place to look. Older Combitherm units with a steam generator need descaling on schedule.

Vector ovens: one chamber down

A Vector pushes fast air straight down and up through each chamber. Alto-Shaam calls this Structured Air. Every chamber has its own heater and blower. So one chamber can lag while the rest cook fine.

When that happens, we test the lagging chamber's blower motor and element. The jet plates that shape the airflow can clog with grease. Pull them and soak them, per the manual. A chamber that reads hot but cooks slow often has blocked plates, not a bad heater.

Vector ovens use no water. If someone tells you to descale one, they have the wrong oven in mind.

Doors, controls and power

Hinges and gaskets take a beating on a busy line. A door that springs back or drips needs parts, not tape. Touchscreens crack when hit by sheet pans. A blank screen with a live breaker may be the screen, the board behind it or a tripped high limit. We check supply voltage at the oven first. Low voltage on one leg causes odd faults.

What a commercial visit costs

For a business, our diagnostic is $149. Approve the Alto-Shaam repair and the $149 is waived. Your kitchen gets a fixed price, parts and labor in one number, before we pull a panel.

An Alto-Shaam tech can be at your back door as early as 6 AM, before prep starts. Our last Alto-Shaam visits end at 9 PM, and we work all seven days. Same-day service covers most calls, and managers can book online. A+ is an independent service company, owned by one family since 2015. Each tech on an Alto-Shaam job is insured and licensed, and none skips the background check. Alto-Shaam repairs are under our warranty. Probes, gaskets and common switches are truck stock. Cables, boards and blower motors are ordered by serial number.

Repair or replace, from a manager's view

Count the cost of a dark oven first. A Cook and Hold that fails overnight can spoil a full load of protein. A combi that is down can stall half the menu. A quick repair usually beats the wait for a new unit.

The bodies are stainless steel and last. Cables, probes, gaskets, valves, motors and boards are all made to be swapped. We would talk about a new oven when an old combi has deep scale damage and a worn cavity at once.
