Garland convection ovens on the line

Garland sells its convection ovens under the Master Series name. They come in gas and electric. You can run one deck or stack two. The standard gas deck is rated at 60,000 BTU, and a double stack at 120,000. The fan has two speeds. The oven runs from 150 to 500 degrees. Inside are 13 rack positions and six racks. The doors are a 60/40 split and open together with one hand.

That design is simple and tough. It also tells us where to look when bakes go wrong. Below are the faults we see most, from the top of the list down.

Pale on one side, dark on the other

Uneven bake is the number one complaint. A convection oven cooks with moving air. If the air stops or slows, the racks near the heat overcook. The rest come out pale.

The blower motor is the first suspect. Its bearings wear from heat and long days. You may hear a whine or a scrape before it quits. The blower wheel can also work loose on the shaft or pack with grease. Either one cuts air flow. We check the fan on both speeds. If low works and high does not, the speed switch or a motor winding is at fault.

Loading matters too. Sheet pans pushed tight to the back wall block the air. So does foil on the racks.

Gas oven will not light or will not stay lit

  • No spark or glow. The igniter or its module has failed.
  • Spark but no flame. The gas valve is not opening, or the supply is shut.
  • Lights, then drops out. The flame sensor is dirty or sits out of the flame.
  • Burner lights late with a thump. Dirty burner ports or a weak igniter.
  • Nothing happens at all. A door switch is open, so the control holds the gas off.
  • Heat climbs past the set point. The thermostat has failed or lost its calibration.

On electric Master ovens there is no flame to chase. There we test the elements, the contactor that feeds them and the high limit.

Doors, thermostats and timers

The two doors are linked. Pull one and the other follows. A linkage ties them. When that link stretches, the doors stop closing tight. One may hang open a finger width. Heat spills out, the burner runs long and the door switch may not make. We adjust or replace the linkage, the hinges and the gaskets. It is a small repair that fixes a lot of odd heat complaints.

Many Master ovens use plain analog knobs with a mechanical timer. They hold up well in a hot kitchen. When a thermostat drifts, the dial says 350 and the cavity sits at 310. Your bake times creep up. We check the real temp with our own probe at several points. Then we calibrate or replace the control. A timer that will not ring or will not shut off the heat gets replaced.

What a service call costs a business

For a Garland oven in a business, the diagnostic is $149. Give the oven repair a yes and we waive that $149. Your manager sees one locked oven price first, with labor and parts counted. That lets you sign off without guessing at the final bill. Garland oven visits begin at 6 AM, and the late window closes at 9 PM, all week. Early calls can often be seen before lunch service. A+ is an independent repair company. Oven techs here are licensed and insured, and each passed our background screen.

Keeping an old Master oven or moving on

These ovens are built to be fixed. Motors, igniters, valves, thermostats and door parts are all stock items. We say replace only when the cavity liner has burned through or the frame has warped. A double stack with one dead deck is nearly always worth the repair. You still have half your oven while we wait on a part.
